Seared Tuna Ahi on a bed of salad

Melt in the mouth tasty, healthy and so easy to prepare

Tuna steaks300g cut as 2 thick steaks
Iceberg lettuce
Spring onion
Red pepper
Pine nuts
Soy sauce
Lemon Juice
Olive oil
Vinegar (preferably raspberry)

You may wonder at the sense of eating fish that is raw in the middle. Like the best steaks, this is how it is meant to be eaten, and until youíve tried this you wonít know what you are missing. Be brave, this recipe is so quick and easy to cook that itís definitely one to cook in front of your guest(s), because it requires very little concentration.
. . . The tuna will just melt in the mouth and is so healthy especially if you are on a low fat diet. Buy the freshest tuna you can from a good supermarket deli counter on the day. Arrange it so it looks fabulous on the plate; itíll taste as good as it looks.

How to make it

Get all your ingredients out and line them up next to your preparation area, this is a quick meal to cook and you want to be ready for action. Put some water on to boil, ready for the vegetables you have chosen to serve with your seared tuna. Cut the lettuce in half and then into two wedges. Carefully lift up each lettuce slice without disrupting it too much and lay one centrally on each dinner plate. Right away this looks so fresh and appetizing. Slice the cucumber very thinly and lay three or four pieces next to the lettuce. Cut some of the pepper into very thin strips and arrange as artistically as possible. Slice the spring onion and put to one side.

You can either invent your own dressing or, put equal measures (only roughly equal) of olive oil and vinegar (a fancy one would be nice, white wine or raspberry for example) in a glass or jar, add a good dessert spoon of lemon juice and three generous dessert spoons of soy sauce, if you like it sweet add a dash of maple syrup and stir, or if you used a jar, put the lid on and shake like crazy.
. . . Now by this time, the water should be boiling, so put the prepared vegetables in. You donít really need vegetables, because you already have the salad, so keep it simple, fine green beans or baby asparagus tips, for example. Donít over cook the vegetables; three to five minutes is all most vegetables need, by the time the tuna is done they should be ready.
. . . Heat some olive oil in a frying pan till it is really hot. Carefully place the tuna in the pan, it should sizzle. Cooking it should only take a couple minutes each side (which will leave it raw in the middle, which is exactly how it should be). Cook until the outside of the meat has turned from pink to light brown all over, but donít overcook; the pink inside is what seared tuna is all about.

When the tuna is cooked on the outside carefully lift both pieces on to a clean chopping board and using a very sharp knife cut the tuna into slices about 10mm - 15mm thick, being careful not to break up the structure of the tuna. Drain the vegetables and lay on the plate artistically next to the salad. Sprinkle a few pine nuts over the salad. Arrange the sliced tuna over the lettuce and drizzle a splash of your dressing over the top of the tuna and garnish with the sliced spring onions.

Cooking for your kids
Donít always get a take out or just heat up a ready meal. You can cook simple tasty food really easily, itís cheaper and much better for you and your kids will love it. If you cook your own meals you can customize them to your kidsí tastes and make food that they love and makes them feel special.

Kids love routine, so there is nothing wrong with having the same favourite meal every time they come to stay or visit, in fact it's likely to become a really nice routine that they look forward to. I do Baked Bean Con Carne on a Friday night, and my children often ask if itís Bean Con Carne day.

They almost feel cheated if I change the menu. If you cook your own food you can afford to get the best ingredients, and if you cook more than you need then you can freeze it for next time, or in single portions for your own meals on other days when you donít feel like cooking a meal.

Cooking for your kids is a good way to show them how capable you are and is a great way to introduce them to proper food which makes those special restaurant outings much easier all round.
