Wonderful jam tarts

Ingredients
Ready made short crust pastry 250g
Jam or marmalade
Butter or fat

Although making pastry is quick, buying it is quicker and that means all you have to do is roll out, cut out circles, fill with jam and bakeÖ all the fun bits, and then, at the end a nice treat for everyone to eat.

How to make it

Roll out about 250g of ready made pastry to about 3mm thick. Pastry gets thicker when it cooks, so make sure itís thin when itís rolled it out. Cut 12 discs from the pastry using an upturned glass, or pastry cutter if you have one. The scraps can be combined and rolled out again. If you want, cut any small shapes you like from the scraps, to decorate the tops of the tarts.
. . . Grease the multi-cake tray using a piece of butter wrapper torn off and rubbed round (I loved doing this bit when I was a kid). Carefully push the pastry discs into the cups in the tray being careful not to stretch the pastry too unevenly or tear it. Spoon no more than 1 teaspoon of jam or marmalade into the cups; do not put too much in, because it will bubble over the edge when itís cooking. pipless, jams, jellies and no-peel marmalades are best.
. . . Decorate the tops of some of the tarts by just resting the cut shapes on top of the fillings. Bake in a preheated oven (Mk 6, 400F, 200C) for about 20 minutes, then layout carefully on a wire rack or grill to cool. Do not eat straight away, hot jam is very hot and will burn you. After 10 minutes they will still be warm. Jam tarts make a lovely dessert, especially with custard.

Donít always get a take out or just heat up a ready meal. You can cook simple tasty food really easily, itís cheaper and much better for you and your kids will love it. If you cook your own meals you can customize them to your kidsí tastes and make food that they love and makes them feel special.

Kids love routine, so there is nothing wrong with having the same favourite meal every time they come to stay or visit, in fact it's likely to become a really nice routine that they look forward to. I do Baked Bean Con Carne on a Friday night, and my children often ask if itís Bean Con Carne day.

They almost feel cheated if I change the menu. If you cook your own food you can afford to get the best ingredients, and if you cook more than you need then you can freeze it for next time, or in single portions for your own meals on other days when you donít feel like cooking a meal.

Cooking for your kids is a good way to show them how capable you are and is a great way to introduce them to proper food which makes those special restaurant outings much easier all round.
